Daily you will make: Tortillas, Salsas and Guacamole
Monday: Taco Feast: Al Pastor Pork, Beef Barbacoa, Chicken and Vegan Tacos, Jalapeños en Escabeche.
Tuesday: Chocolate Mole Enchiladas, Tamales, Poblano cream soup, all from scratch
Wednesday: SeaFood Catch of the Day, 3 different Ceviches, Shrimp in Chipotle sauce, Octopus or Fish Bbq.
Thursday: Albondigas (Mexican Style meat balls), Chiles Rellenos,
Friday: Green Mole from Oaxaca, (base of Pumpkin seed and Tomatillo sauce), Pozole, Carnitas and Tamales.

Description
Meet Chef Enrique and get ready for a full immersion into the culture and of course the flavor behind the Mexican cuisine.
Chef Enrique will meet you at Mercado Palmar De Aramara where you will learn how to elect the ingredients and also about the history and traditions behind the Mexican meals and the ingredients that compose the flavors.
After picking up all the ingredientes needed for the recipes of the day, you will get to Chef Enrique's house in Jardines de las Gaviotas, where the cooking class, the mixology class and the food tasting will take place.
All this in an authentic and warm: "Mi Casa tu Casa" atmosphere.

• Taco Monday: Al Pastor or Pibil Pork tacos - Learn how to make the marinade and to cook the best of the Mexican Tacos with fresh home made tortillas and the most delicious salsas
• Tuesday: Mexican Mole and Tamales - Grind the cacao to make the chocolate paste to be combined with the chiles and all the spices that compose the Mole "the Mexican Finest Sauce"
• Wednesday of the catch of the day and Mexican style sea food - Learn to cook Mexican style sea food and fish: ceviches, fish filet, octopus tacos, shrimp aguachiles and more.
• Thursday of Chiles rellenos and Mexican Albóndigas - Extraordinary flavors from Grandma's recipes book
• Friday the Best from Jalisco: Birria in Adobo Sauce, Home Tortillas and Salsas - A true Mexican feast.

We made the most wonderful 3 salsas (which graced our tostadas) and we also made chili rellenos, which were beautiful and sooo delicious!! Enrique was sensitive to various tastes (some like it hot… some not so much) in the group and accommodated very nicely. Also, I am normally not a fan of guacamole (yeah, I know!)… but the way Enrique taught us to make it was fabulous and makes me want to give guac a chance!Chef Enrique Ari was fabulous! The whole experience from the farmers' market to cooking in their lovely home, and having an amazing meal was one of the highlights of our trip! I highly recommend this experience. Then he drove us to his personal home (beautiful and modern) where we learned to make pozole, tamales, salsa, mole', enchiladas, and margaritas with the help of Eri, his wife, and a helper (sorry we don'tremmber the her name). We also made our own tortillas - excellent. The food was fresh and tasty. Our family did a private cooking class with Enrique and his lovely wife and sister-in-law and it was amazing! Our older teen/early 20's boys all loved it, too - especially the eating part! The day started by meeting Enrique at the local seafood/produce market which was a great experience in and of itself. Enrique helped educate us on how to select fresh tuna, pork, chorizo and all of the fruits and vegetables we needed to make our dishes. He also walked us through this cute little tortilla factory and showed us the spots where locals go to eat various dishes. He then drove us back to his beautiful home where he walked us through how to make everything from scratch. It was so fun and educational to have such a hands on cooking class where everyone was involved. Our meal consisted of sopas with chorizo/bean puree topped with salsa, guacamole and creme fraiche - delicious! Our second course was tuna ceviche on a tostada with a side of steamed chayote (Mexican squash) - yum! Our final course was pork tacos on tortillas that we made ourselves topped with pineapple, pickled red onion, and two salsas accompanied by fresh squeezed pineapple/orange margaritas - wow!
