- Fermentation, Filtering and Conditioning
- You’ll be taking home your own Makgeolli to ferment, which will yield about close to 2 liters

Joe was a fantastic host who went over the art of making makgeolli in an entertaining and interactive way. Truly a fun way to spend a day ! He even offered his personal selection of makgeolli that tastes differently and 100x better than the ones you'll find at a market. Before this class, I wasn't a fan of makgeolli but after trying his handmade ones, it's hands down a favorite alcohol of mine. I would highly recommend this day class to those looking to do something novel in Korea as well as to those who appreciate good alcohol. Went with a friend on a nice fall afternoon to Joe's home studio. Everything is prepared for you so you don't have to bring anything. There is time for questions and interesting discussion while we work with our hands or simply wait for the rice to cook -- everything from how you got started in this to how does that kimchi-fridge-turned makgeolli-fridge behind you work. There is a lot of detailed knowledge and if you think you already know about makgeolli you can still ask in-depth questions and get answers. There are also powerpoint slides for those who are in it for the learning, and there is tasting for those who are in it for the drinking; even better if you're in it for both. At the end you walk home with a makgeolli "pet" (like a sourdough pet) and instructions on what to do each day (answer: just stir a few times and then don't stir anymore and wait!) Voila you get your own makgeolli at the end, with enough to serve your friends a full round.I highly recommend taking this class! It was a lot a fun learning how to make makgeolli and, more importantly, really delicious! We got to taste around four different flavors during class including my two favorites, ginger and chamhoe. We got to taste around four different flavors during class including my two favorites, ginger and chamhoe. Joe made the class very engaging and while I took this class for fun, I'm now genuinely interested in making more makgeolli at home in the future, especially since the makgeolli that I took home from this class turned out so well. I shared it with some co-workers and they all really loved it and asked for more!This class was everything I hoped it would be plus more. I learned how to brew my own makgeolli, created my own and even got to sample and drink some of Joe's very own Baekusaeng makgeolli - which is unreal 👌.
