The Real Traditional Oaxaca Cooking class
Overview
After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" at Quinta Brava, this project tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use, we will cook a nice bunch of recipes form all over Oaxaca in a old fashioned wood stove called "Lorena" cause the way how is been constructed ( in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

I can't imagine a better cooking class than this one. There were 8 of us, and Miguel and his staff sill managed to keep everything organized, clean and moving smoothly. At the start, he asks you what you'd like to make and builds the menu from there. In less than 6 hours, we did all this: learned about nixtamalized corn and how to cook it, ground cooked corn into masa, made tortillas in a tortilla press, turned those into quesadillas or tetelas or empanadas with fillings such as huitlacoche, shredded quesillo and squash blossoms; made 4 different kinds of salsas, prepared all the ingredients and made three moles as well as tasting two others; made a corn and vegetable soup, made guacamole; cut up pork and made a marinade for tacos al pastor; drank mezcal and cerveza as well as waters flavored with fruits, and made a wonderful dessert with cooked plaintains, chocolate, cream cheese, flavorings and cinnamon. We also went to the local market to get the ingredients, and saw some unusual ones like coconut flowers. It was a great day, the food was wonderful, and everything about the class was interesting and very professionally done. We highly recommend this cooking class, and Miguel, a long-time chef, is a great teacher. .It was a fantastic day. Great hosts and delicious food!! Thank you Miguel and family!! Great value for money

Our day at Quinta Brava was the ultimate immersive cooking experience. Quinta Brava is owned and run by fascinating worldly Chef Miguel Angel at his home and farm. We made so much food I can’t even remember. We started with chocolate con Agua, everyone’s favorite drink and then got to work making corn masa, which we did the final grind at the neighborhood molino. On return made tortillas, which turned into 3 guesadilla variations on ways to fill them: mixing herbs into the masa, using zucchini flowers on the outside plus a cheese and herb filling, or just filled with whatever you liked. One of the fillings was sautéed onions and nopales strips, and I was delighted to learn that you could cook away the slime and make tasty nopales. We ate these with a wonderful vegetable soup that we made. Then we turned to moles. We tasted several classic styles that he had already made (negro, coloradito, and Amarillo), And then learned how to make the famous Estafado Molé, a second Peanut Mole which I adored, and a Green mole. These were plated with chicken and pork and served to us for lunch. We also made our own dessert, which was a mashed plantain with a filling of cream cheese and chocolate, drizzled with sugar glaze and garnished with a pecan and dried cranberry. Our lunch and drink was water mixed with Chia seeds! And I forgot to mention that before we sat down to lunch we toasted cacao beans, took them back to the molino and had them ground with sugar, and put the chocolate mixture into molds, which was beautifully wrapped and given to us as a take-home gift. What a great day! And door to door chauffeur service made it absolutely perfect.This was an amazing experience. The day starts with being picked up by Rafa. You are going to walk to the market, the miller and then cook everything you eat. I don’t want to give too much away, because you should experience this for your self, but by the end of the day our bellies were full after enjoying a 5 course meal. Chef Miguel Alvarez also sends you the recipes and recommendations for places to travel to and specific restaurants to check out. If you’re completely naive to Mexican food in general and Oaxacan food specifically, do not be intimidated. You’re going to learn about mole, tortillas, memelas, tlayudas, all of it. It’s simple and fun. Highly recommend.
