Cooking Class in your accommodation: Fresh handmade pasta
Overview
This experience will not only allow you to carry in your luggage back home the satisfaction of having been part of the preparation of 3 types of pasta with your own hands, but also to have learned techniques and tricks that you can put into practice to delight your family and friends on their way home.
The experience includes the preparation of 3 types of fresh pasta: Orecchiette, Tagliatelle and a stuffed egg pasta, but the experience does not end here, for each type of pasta we will prepare a sauce/dressing for an explosion of flavor. At the end, all seated, to taste the prepared dishes, accompanied by a starter that our local chef will offer us.

• Fresh pasta: Orecchiette with cherry tomato and caccioricotta cheese -
• Fresh egg pasta: Tagliatelle with fresh tomato sauce and Parmesan
• Stuffed pasta: radicchio, ricotta and speck. Seasoning: Sage, butter, pecorino
• Focaccia, local cheeses
• Puff pastry with lemon cream

We booked Raices del Sud for a traditional Pugleise cooking course (to take place at our villa) with an emphasis on making three types of pasta from scratch, each with its own sauce. My family (4 children ages 9-14) all rolled up sleeves and got completely stuck into the immersive experience. Angela & Marianna were totally relaxed and professional and the resulting meal was world class. We are grateful to have learned so much from the experience and will be making our own pasta in the future. Can’t recommend it highly enough.Francesca, Marianna and Valeria were enthusiastic and patient with our large group including adults and 8 children ranging from 3-16 years old. We had a fantastic time making orecchiette, tagliatelle, and ravioli and eating them with 3 delicious sauces. One of the highlights of our time in Puglia.

Our teachers were two amazing puglian women that taught us how to make 3 different types of pasta. This a great activity for all ages and their English is very good.

From the time Francesca and Angela arrived, until the moment they left, my family was pampered with amazing food. From appetizer to desert, everything was a perfect complement to the delicious pasta we made. The pasta lesson was top notch. Francesca and Angela tailored their instruction to each of our skill levels, and the techniques we learned were simple and easy to follow...we will use them for many years to come. A truly memorable experience that we will never forget!
