We always start the tastings with an explanation of how to taste a wine properly. The methode is based on the Wine & Spirit Education Trust systematic approach to wine tasting. Your guide reached the highest level of this school in London last year and has ten years of experience leading tasting to both amateurs and professionals.
Then along with tasting wines, he will guide you through the different areas within Burgundy, the different grapes, the history, the rules of production, how to read a label in Burgundy etc. Everything you want to understand about the region will be approched.
The atmosphere is always relaxed, you won't feel rushed, and you won't feel like you can't ask a question. We aim to make you feel confortable and make you want to come back!

I can’t imagine a better way to do so than this tasting experience. We absolutely loved learning from Matt. He is incredibly knowledgeable and chose fantastic wines, which we thoroughly enjoyed. He is unpretentious, welcoming, and hugely informative. He taught us all about how to do the tastings, what sorts of things to look for on labels, and how different micro-regions within Burgundy have unique wine profiles. He also helped us make a dinner reservation at a delicious nearby restaurant. If we could give him 6 out of 5 stars, we would!My wife and I were looking for to get a full lesson on Burgundian wines when we were in Dijon, and we cannot be happier with our decision to book a tasting with Matt. Our family recently spent a week in France. Would we consider ourselves oenophiles? Hardly. But we were in Bourgogne, we consider ourselves curious learners, and we jumped at the chance to enjoy a wine tasting at The Wine Compass. Matt explained how the geography (and geology) of Bourgogne lent itself to perfect growing conditions for some grape varietals. He went on to explain the differentiations of regional appellations, village appellations, Village Premier Cru appellations and Grand Cru appellations. Matt shared a variety of excellent wines: Chablis, Chardonnay, Sauvignon Blanc and Pinots. He patiently answered questions about wine growing, the importance of wine glass shape, and how to know when to send back a wine that has turned. The charcuterie was delicious, including cheese and pate along with homemade goodies from a family kitchen. Matt made the wine experience accessible and enjoyable for these novices, but the wine experts who shared the room with us had a great time as well. Highly recommend!!We thoroughly enjoyed this wine tasting. Our host, Matt, was kind, convivial, patient, informative - you couldn’t ask for someone better. We learned so much, and it was all fun.
