Highly recommend! It was very informative and fun. Learned a lot about cacao as well as cultures around cacao in Oaxaca. We tried different types of cacaos cultivated in different regions and also tried chocolate drinks. Our favorite was chocolate with chili!

We had a wonderful experience during our chocolate tasting. We were engaged during the entire experience and learned about the history of cacaos, tried the fruits during different phases of the process and enjoyed chocolate in different forms including hot chocolate. We even got a special treat at the end which was a toast with strawberries and a "Oaxacan" affogato. Our instructor was conversational and was available to answer questions.

My wife and I did a 3 hour visit learning about the history of chocolate in Mexico and how chocolate is grown, harvested and processed into the chocolate drinks and products that I in particular love! We learned about the different types of beans, shelling them, roasting them, grinding them, adding sugar and then enjoying a chocolate drink, leaving with the bag of chocolate we had processed. Our host was very knowledgeable and amicable during the 3 hours. Highly recommended for chocolate lovers! As a note, the location is at the back of the address, and not obvious as the front has no signage (apparently they can't put any up), so be persistent and walk through the front area until the store and chocolate area open up.

Wonderful experience. We had so much fun trying different kinds of cocoa and learning the history and all about cocoa production. Our guide, Azomalli, was just terrific, great way to spend a couple of hours in Oaxaca.

We had a lovely afternoon at chima! They are so knowledgeable and caring. The tasting was delicious and very interesting, we learned a lot about the different kind of cocoas, processes and history. A really great experience that we would definitely recommend.

This place was amazing! Simply amazing! I highly recommend you add this one to your tour list! You really get an in depth knowledge of cacao, you get to make your own delicious chocolate drinks! The establishment itself is gorgeous! Rustic and so beautifully decorated. Ervit, Diego and the young woman working there will absolutely take care of you. 10/10 recommend!

What a great fantastic chocolate experience, my teacher in all things Oaxaca chocolate was Acomalli from Oaxaca, very knowledgeable and spoke perfect English, do come with an empty belly as the many delicious samples and the snack and dessert at the end were oh so tasty, definitely recommended if you are a chocolate/lover of flavors

The experience was outstanding for several reasons: very kind and attentive hosts; shared a lot of knowledge about cacao; not a rushed experience; enabled you to taste different types of cacao and offered commentary; not rushed and very personalized. Our daughter loved it! Took lots of pictures. Definitely recommend.

This was truly an incredible, authentic, and unique experience and so worthwhile! Our instructor was very passionate, knowledgeable, articulate, and friendly and so were the whole team. That combined with the cool ambiance and decor of the space made this experience so fun that after 2+ hours I didn’t want to leave. It was really cool to learn about cacao and the hands-on part of making your own chocolate from scratch was remarkable. Initially I wasn’t sure what to expect (I went solo), but i’m so happy that I went and will cherish this memory forever 🫶🏻

I visited Chimalapa for a two hour Cacao tasting. Before that, I already gained some experience in a Cacao factory and did some cacao farm tours, but THIS tasting was by far the most informative, professional and delicious experience I made! Rut explained everything from the origin of the beans to the taste and process in a very detailed and friendly way. Every question I had, she was willing to answer. I could feel her and her colleagues passion for Cacao and their jobs! The tasting was very interesting and it was great to mix and prepare my own cups of drinking chocolate. The two hours passed by too fast. You will not regret the experience: you will be even more in love with Cacao and chocolate! Besides, the team is supporting the local cacao farms and they work very intensivly together, so you do lots of good things when you join their workshop or tasting. Enjoy!

Impressive knowledge of cacao! Small batch, handmade and delicious. Diego was kind enough to accept me for a solo class and walk me though the entire process from the history, culture, different kinds of cacao plants and how they process in-house to get the finished product. I learned how they roast the beans and watched Ervit grind them by hand (he let me grind too!). I sampled raw, roasted, cold & hot drinks with both milk and water and I felt special because I also got to enjoy a cacao dish and dessert. Highly recommend!

My girlfriend and I loved this class! Our host was very friendly and knowledgable. We learned about the history of cacao in Mexico and sampled the many flavors of different species. We tasted many of the different chocolate products offered by the small business that runs the class. We even got to try preparing the drinks ourselves in the traditional Oaxacan technique. The small group size (4 people total) made for a more personal experience. Our hosts were very generous with the samples as well as a delicious seasonal chocolate sandwich and coffee desert. We were happy to support a local small business and bought a bag of chocolate to bring home. Highly reccommend to anyone who loves chocolate!

This was a wonderful experience! I greatly enjoyed learning about and tasting chocolate. Even though I don't consider myself to be a "chocolate lover," I still thought this was an amazing experience because Diego was so passionate about his craft and very knowledgeable. I highly recommend this experience if you are in Oaxaca :)

Thus was a wonderful experience! Our "guide" was very knowledgeable in the history, culture, and making of chocolate. His Spanish was easy to understand and he spoke to us in English if we needed clarification. We felt this company went above and beyond to give us an excellent experience.
