What an experience in such a beautiful setting learning all about the process of making real balsamic vinegar from scratch. The Cavedoni family has an interesting history and it’s nice to see that the six generation is continuing their passion of producing quality balsamic vinegar. We were able to taste the different ages of the balsamic vinegar which was amazing! They ended the tour with an amazing lunch incorporating the variety of balsamic vinegars. Would definitely recommend visiting them.

My friend said this was a must do tour and I must agree. Marcelo was amazing with us even though a the missing of a train caused my husband and myself to be late. We learned so much about the process, learned about family history and had wonderful conversation. Marcelo and his father were incredibly friendly and welcoming.

The family Cavedoni is seven generations into their "passion" as they call it -- making phenomenal balsamic vinegar that exceeds anything you've ever tasted or bought in a grocery store. We enjoyed new bottles (aged 5 years) and very rare bottles over 160 years. Each one unique and bursting with flavor. Marcello (6th Gen) hosted us and served a full spread to try the balsamico on meat, cheese, strawberries, cake, and greens --- all local to the region. This experience is off the beaten path but worth adding to your itinerary!! It was bellisimo!!

This was a wonderful exposure to the family history of the Cavedoni family and their expertise in balsamic vinegar. We thank our host for the experience. A 2-hour must see if you are in the area. And they export their products!

Truly the most incredible experience. We felt like we were welcomed into the Cavedoni family as a close family friend. The entirely of the tour was done with intention, passion, and love. Our group all felt the same way leaving Acetaia Cavedoni. There is no place in the world like it. We look forward to our swift return.

This is a must and exactly what I was looking for! I so appreciated the small group experience, the tour operator went out of his way to accommodate travel since I was in Bologna and the train only goes to Vignola, he arranged taxi service when I could not. Very special to share a family owned business with it's traditions and celebration of Familia! The setting, Balsamic Vinegar education, food and overall experience was beyond my expectations!

A great, highly recommended, experience. A true family-operated Acetaia with an inspiring approach on making (and aging) balsamic di Modena. Also, value-wise, one of the best tasting experiences. You will get a chance to taste various ages, expensive ones as well, and later to accompany them with food and evaluate different pairings.

Excellent tour delivered by Marcelo, sharing his family’s history making balsamic vinegar. But the tasting - oh, my… what delicious vinegar, and great pairings of meat, cheeses, and desserts. The wine was also very good. Well worth the price.

The father and son that guided us had so much passion and love for what they do! They are true artisans and could not have been nicer about sharing their story and exceptional products with us. We were treated like royalty and had to pinch ourselves at times as we appreciated every minute there. Exceptional!

My wife and I visited 9 18. We drove from Bologna about 50 minutes. Paola (dad) and Marcello(son) we’re fantastic hosts. We learned more than we ever knew about the vinegar production and had a great tasting after. It is a small operation run by family. Set it the vineyard.

Wonderful experience all around. Way beyond my expectations. Very interesting history of making this traditional balsamic vinegar and appreciating the quality. Fantastic charcuterie with local Parma ham and parmigiana reggano cheese and wines. Not to mention dessert! We’ll worth the price.
